Greek Yogurt Mixed Berry Muffins with a Cinnamon Streusel

Makes 12 standard size muffinsPrep time 45min

Dry Ingredients

2              cup Flour

1              cup Sugar

2              teaspoons baking powder

0.5          teaspoons salt

Wet ingredients              

2              eggs

0.66        cup Yogurt

0.33        cup Veggie Oil or Butter

Berries Any kind, Mixed berries or Chopped Strawberries

2.25*     cup

* (2 cup for batter)

 *(1/4 cup reserved for topping)

Streusel Topping             

0.66        Cup

0.33        Cup

1              teaspoon

2              Table spoons soft butter

Preparation Method:    

Mis en place all ingredients before beginning

Steps:  

Preheat oven to 400 degrees Fahrenheit.  Use on regular size muffin pan (12 Muffins) Spray muffin pan with non-stick or use muffin liners.

Prepare dry ingredients In a medium bowl, mix together flour, white sugar, salt, and baking powder

Prepare wet mix              

Combine wet and dry- it will seem dry, however, the moisture in the fruit will make up for it during the baking process

Prepare berries- combine berries with 1 teaspoon of flour or a bit more enough to prevent berries from clumping together and sinking. Fold in the berries into the batter.

Prepare streusel topping*          

Combine brown sugar, flour, cinnamon, and butter in a small bowl. Mix until you have crumb-like mixture

Fill muffin cups, Sprinkle the streusel topping over muffins then add a few berries from the 1/4 cup reserved from batter

Bake at 400 for about 20 minutes in the oven. 

*Start with an oven that is at 450 and then turn down to 400 after you put the muffins in this will give you a crispy streusel topping.
